Miracle of oil and light

 

No matter what happens in the world and in our lives, the only way I know how to stay balanced, sane, and happy is to focus on the positive.  There is always a light at the end of a tunnel, even if there is a crack then finally the light can come through.  Most Jewish holidays are about this concept, but Chanukah is specifically about how our inner light can shine the spotlight on any darkness, and transform it.

I am excited to try the oven baked latkes tonight for the 7th night of Chanukah and it is also Shabbat.  We love having guests, so we are making it big tonight, with family and friends of all ages, so my kids can have some playmates too.

Each night it gets brighter and brighter,

Just like we get brighter when we can be our true selves inside and out in the world,

CRISPY OVEN-BAKED POTATO LATKES

When I first made these I knew I hit the jackpot. Putting the latke batter in a cupcake pan results in perfect latkes every time! For some reason though, you need to use an disposable aluminum muffin/cupcake pan. That is the trick. (If you try it in a regular cupcake pan and they come out great, let me know!) Besides for it being healthier, I love that there is no need to stand over a pan of oil frying each one! These have the crispy exterior of a fried latke, except you barely use any oil. If you are looking for a healthier alternative with the same taste as a fried latke, look no further.

Crispy Oven-Baked Potato Latkes    Author: Rena Tuchinsky
 Serves: 24 Latkes
INGREDIENTS
  • 5 potatoes
  • 1 onion
  • 1 teaspoon olive oil
  • 1 large egg
  • 1⁄4 teaspoon black pepper
  • 1 1⁄4 teaspoons salt
  • Olive oil spray or any non stick cooking spray
INSTRUCTIONS
  1. Preheat oven to 375F.
  2. Grate the potatoes and onion.
  3. Mix in the olive oil, egg, salt and pepper.
  4. Spray your disposable muffin/cupcake baking pan well with cooking spray. Use a heaping tablespoon to distribute the mixture. Do not use all the liquid in the bowl, just a little, otherwise squeeze out most of it. Do not fill the cupcake pan too high. You want them to be flatter just like regular latkes.
  5. After they are all in, press them down a bit then spray the tops with cooking spray.
  6. Bake for about 30-40 minutes until the tops are browned a little. Time needed may vary.
  7. Allow to cool and use a spoon to go around the edges and under the latkes to lift out of the pan.
